Grilled Fish Tacos

Warm corn tortillas and grilled fish with a highly spiced sauce for an abundance of fresh taste. Serve with broccoli slaw and grilled corn at the cob for a notable summer meal.

INGREDIENTS

Grilled Fish
2  Organic cod or tilapia Fillets
1/4 cup Organic mayonnaise (be sure it is gluten-free)
1 tsp Organic salt
1 tsp Organic cumin ground
1 tsp Organic paprika
1/2 tsp Organic chili powder
1/2 tsp Organic oregano
1 clove organic garlic minced
Sauce
4 tbsp Organic mayonnaise (be sure it is gluten-free)
7 oz Organic plain yogurt
1 tbsp organic olive oil
1/4 cup Organic cilantro fresh, chopped
1 clove organic garlic minced
1/2 tsp Organic salt
1/4 tsp Organic cumin ground
1/4 tsp Organic coriander
1 tsp Organic chili powder
1 3.5 oz can Organic green chilies diced
pico de Gallo
4 Organic tomatoes Roma
1/4 cup Organic cilantro fresh, chopped
1 clove organic garlic minced
1 Organic jalapeño seeds and membranes removed
1/4 tsp Organic cumin ground
1 Organic lime juiced
1 Organic yellow onion diced
Tortillas
8 Organic corn tortillas gluten-free

INSTRUCTIONS

Grilled Fish

  1. Spray non-stick spray on a griddle pan.
  2. Preheat the grill on medium heat.
  3. Combine all the ingredients except the fish in a mixing bowl.
  4. Rub the mixture onto the fish on both sides.
  5. Place fish skin side down on the griddle and cook, after 5 minutes, turn the fish, cook for another 2-3 minutes. Using a spatula, remove fish from the grill.

Sauce

  1. Combine all the ingredients in a bowl and add the juice from 1 lime, mix well and set aside.

Pico de Gallo

  1. Place all the ingredients in a bowl and add the juice of 1 lime, mix well and set aside.

Corn Tortillas

  1. Place 8 tortillas in aluminum foil and close the sides.
  2. Place tortillas on the grill to warm them up.
  3. Serve filled tacos with fresh lime wedges, cilantro, and pico de gallo.
